“They were young! They were wild!”
My husband loves meatloaf. Me…not so much. When we have meatloaf, I gladly hand the kitchen over to him and step aside. I have to give him credit, he’s pretty good at making it! (When he offers to cook it, I don’t groan and sigh anymore lol)
I decided to surprise him one night while he was working and make it myself. I’ve never made meatloaf and I wanted it to be amazingly delicious, very flavorful, and different. I thought: What’s the best way to make meatloaf?? What can you add to make it amazing?? BACON!! WRAP IT IN BACON!!!!
It was super moist and super tasty!! Needless to say…My hubby has requested that I be the “official meatloaf maker” from now on!! Enjoy!! 🙂
1 cup Milk
1 1/2 cups Breadcrumbs
2 pounds Ground Beef
1 cup Parmesan Cheese
Salt & Pepper
1/3 cup Parsley
4 Eggs Beaten
10 slices Bacon
1 1/2 cups Ketchup
1/2 cup Brown Sugar
Tabasco to taste
Preheat oven to 350 degrees.
Place the ground beef, breadcrumbs, milk, Parmesan, salt, pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
Mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. Line the bottom of the pan with foil to avoid a big mess and make clean up easier!
Lay bacon slices over the top, tucking them underneath the meatloaf.
Make the sauce:
add ketchup, brown sugar, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
Bake for 90 minutes or until cooked through (adding more sauce after 45 minutes, if desired). Slice and serve with remaining sauce.
