Crockpot Pot Roast And Veggies

“I truly amaze myself…This after five martinis!”

Pot roast is one of my best go-to meals! Every time I make it, it is simply delicious!! I’ve always cooked mine in the crockpot. Just throw everything in and let it cook through the day! It takes minutes to prep, one pot to cook, and will give you major kudos as though you’ve been slaving away on a gourmet meal all day long!!
Like many meals, it has the potential to evolve the more you make it. I’ve seen recipes online that include many different flavor inducing ingredients. My roast has always been yummy, but I have changed it up a tad the last few times I’ve made it, to make it amazingly flavorful!! Hope you enjoy…the food AND the compliments!!! 😉

1 Beef Roast, 2-3 lbs.
1 small package of carrots, chopped OR 1 small package baby carrots
1/2 small package baby red OR gold potatoes, diced (for potatoes, add what you want, eyeball amount)
1 Package Brown Gravy Mix
1 Package Hidden Valley Ranch Dip Seasoning
1 Package Italian Dressing Seasoning)
1/2 Cup Water
Salt & Pepper (Optional)
A few shakes of Thyme (Optional)

Place roast in crockpot. In a small bowl, combine gravy, ranch, and Italian mixes together with 1/2 cup of water. Stir until combined and pour over roast. Add veggies to crockpot. Sprinkle a little thyme, salt, and pepper over veggies, Cover with lid. Stir as needed. Cook on high for 3-4 hours or low for 5-7 hours. Once roast is cooked through and veggies are tender, transfer roast to plate to cut into strips. Toss roast back into crockpot, give a quick stir, and enjoy!!!
