Spanish Rice

“Ta Da….Now let’s have a cocktail”

Spanish Rice:

I am a huge fan of this recipe! Cheap, quick, delicious, my hubby can make it also, (Love when we cook together) lots of leftovers, AND cooks in one pan!! I’m always a fan of fewer dishes to clean!!!

Shopping list:

2 Pounds of Hamburger

1 Cup of Rice

1 Green Bell Pepper

White Onion

1 Can of Diced Tomatoes with green chilles

1 Jalapeno (Optional)

1 Small can of Tomato Sauce

Pace Salsa To Taste (We usually use between 1/4 and 1/3 of the jar)

1 Cup of Water

Bacon, Cheese, and Sour Cream (All Optional)

Dice up the Onion, green pepper, and jalapeno, remove ribs and seeds. Sautee in a pan with hamburger, drain, return to pan. Add the rice, water, diced tomatoes, tomato sauce, and salsa to the pan, stir. Bring everything to a boil, cover with lid, and reduce to medium-low heat, stir as needed. Cook for 15-20 minutes or until rice is done.

While the rice is cooking, fry up some bacon (optional) Put on paper towels. Once it’s cool enough, Tear bacon up. Sprinke on top of rice. Add cheese and sour cream if desired!
